Less than a week and I will wake up and be a free woman! Although, there is something to be said about eating clean. You really do feel and perform better. That being said, I miss bacon….and honey….so I am looking forward to my regular paleo ways. I haven’t really lost any weight, which is fine, it’s not about a number, it’s about how you feel. I definitely feel pretty dang good and my stomach hasn’t gone on strike like it used to pretty regularly. My friends that have been doing it look stinking awesome. I will write more about them next week, just know that they are amazing and I am blessed to have them in my life.
Speaking of friends, my sweet friend JimBob….one of the wolfpack….was in town last weekend! It was so awesome having him back in Lubbock. He has already left me (again) to return to Ft Worth, I didn’t cry this time though. He’s doing great things as a coach at Crossfit Iron Horse…so if you are in the DFW area be sure to check out that box! I promise you won’t regret it! While he was here I made this shrimp salad and got a thumbs up. I thought it was pretty tastey myself, but affirmation always helps when you’re trying out new recipes.
So I have to tell you, I have really toned down my pinterest addiction. #1 because I’m on whole 30 and the desserts look so freaking delicious I can’t take it. #2 because I am so tired of reading “the lazy girl’s way to skinny” or “workouts for women with no time”. First of all….you should be focused on being healthy not skinny. Second…don’t have time? Make it! Your body needs you to workout. I’m not saying you need to be at the gym every day for hours on end but a 30 minute run in the morning won’t kill you or your schedule. Personally, I’d rather put in a little bit of time each day to ensure health and happiness in life over being completely unhealthy and unable to do any activity in the future. Consider it a savings account. And stop trying to find the lazy way to do it. What a freaking joke. That actually makes me mad. If you can find the time to watch Real Housewives of OC (I mean how cray cray is Alexis) then you can find time to do some squats. End rant. But for real…it’s not supposed to be easy so stop trying to make it a no effort activity. That actually directly contradicts what exercise is. Ok, I’m really finished now.
Whole 30 Shrimp Salad
1lb steamed and shelled shrimp
1 diced granny smith apple
4 stalks diced celery
1 tbs coconut (or apple cider) vinegar
1/2 cup canned coconut milk
3 chopped boiled eggs
1 tsp fresh thyme
1 tsp fresh parsley
1 tsp Italian seasoning
sea salt & pepper to taste
Mix coconut milk, vinegar, and seasonings in a large bowl. Dice apples and celery and add to the bowl. Chop eggs and shrimp and…..you guessed it add to the bowl. Stir everything together so they all get to know each other. Cover with plastic wrap and let them hang out in the fridge for at least 30 min before serving. Stir again before serving and enjoy!
