Can we touch base on how happy I am that I can consume bacon again? If there were such thing as going overboard I would say I would have done that post Whole 30, but I’ve reigned myself back in . I do try to eat some Whole 30 meals here and there, but it is nice not being as strict on myself as I had been. Especially because I am still traveling like a crazy lady for work. But that’s neither here nor there so we will move on.
I’m doing my first competition this weekend. Eeeeeeeek! They posted the WODs last night and for the most part I feel comfortable, I just have to stay out of my own head. I’m excited to do it though because some of my friends are doing it too. One of which is my coach, so that’s always fun. There is a thruster ladder that has me a little worried, why couldn’t it of been a power clean or deadlift ladder?! Obviously there is a greater power who knows I need to keep working on powering through my hips during lifts. Crossfit problems.
Justin’s nut butter puts their delicious almond butter in packets….which I was oblivious to for the past year of eating paleo. But now I know. And now I have a serious almond butter problem on my hands. To make up for it I stopped eating regular nuts. But still, I have stashes of those little packets of love hidden everywhere. I whipped one out of my purse the other day and then realized I had officially become an 80 year old woman just sub almond butter for werthers originals.
I have a strange cabbage habit as well. I can’t get enough of it. I only like it cooked though. Raw cabbage is gross. I also hate raw broccoli. Well, that’s a random fact for you. Let’s cook.
Spicy Bacon & Bison Saute
1lb ground bison
2 jalapeno peppers (seeds removed and diced)
5 pieces of uncured nitrate free bacon
1 medium cabbage (chopped)
1 large carrot (pealed and sliced)
1/2 tbsp red chili flakes
1/2 tbsp chili powder
1 tsp onion powder
1 tsp garlic powder
sea salt & pepper to taste
In a bowl combine ground bison, diced jalapenos, red chili flakes, chili powder, garlic powder, and onion powder. Set aside. In a large pan fry bacon, once it is crispy remove but leave the grease right where it is! Add bison mixture, cabbage, and carrots to the bacon grease party and allow to cook completely. Once cooked dish it out and top with bacon crumbles. Enjoy! To make this Whole 30 friendly, remove the bacon and use coconut oil instead.
